B.E.A.U.T.I.F.U.L.

Dear Friend,

     It is a B.E.A.U.T.I.F.U.L. day outside today! Go check it out! Seriously. Go to a baseball game, hangout on the porch drinking lemonade or you can be like me...I hanged out in my mini garden today. 😎 Either way enjoy that glorious sunshine. I know I did.


I have hidden gnomes everywhere.

So, here's the scoop on whats new. No, not talking about a new Blue Bell Ice Cream flavor, but that does sound amazing right about now. Ssshhh, that's besides the point.  Lately, its been a season of blessings! YES, BLESSINGS! Right and left the Lord has brought many blessings in our lives. One was Jon finishing his Associates Degree and him moving on to a University to finish his schooling. As for me, it's been a steady long-term positions as a substitute. I truly enjoy every minute of it! Plus, I've gotten to know a few new friends, which is always a blessing in itself.

Recently, our sister, Sophie is engaged! Woohoo! How exciting is that? Bring on the planning, right Sophie? Shout out to both her and Gabriel on their engagement.

I am looking forward to the many more blessings I see on it's way.  Even through all the hardships, stretching our hearts, tears, and trials that the Lord may allow come our way. I will still say, He is GREAT and MIGHTY.  Amen. 

A few of you have asked this recipe and as I promised, here it is....

The Magic Muffin Mix

I found this recipe from SkinnyMom off of Pinterest, and love it! 

The ingredients are listed above, but I did change out some to more of a Paleo friendly version. This is NOT a Paleo recipe, but I tried keeping it close as possible. When it came to the kind of muffin you wanted, you just added what is listed next to the muffin to your original ingredients. When it came to the pudding packets I did use those from the store but bought the sugar free

Ingredients:
  • 1 c. of whole wheat flour> I used almond flour
  • 1c. of Stevia> I used coconut sugar
  • 1 tbsp. of vanilla 
  • 1/2 c. of applesauce> I used unsweetened applesauce
  • 1 tsp. baking soda
  • 2 egg whites 

NEXT you will add the other ingredients to whichever kind of muffin you are wanting.  
  1. Banana Walnut- 1 large banana mashed, 1/4 c. of chopped walnuts
  2. Blueberry - 1 c. of fresh blueberries, 2 tbsp. of brown sugar
  3. Lemon Poppyseed- 1/2 c. of lemon pudding (prepared), 1 tbsp. of poppyseeds, 1 packet of vanilla pudding
  4. Chocolate Chip- 3/4 c. of mini chocolate chips, 2 tbsp. of brown sugar, 1 packet of vanilla pudding

Directions:
  • Preheat oven to 350. 
  • Mix all liquid ingredients to your dry ingredients slowly. 
  • Fill muffin liners 3/4 full. 
  • Bake 15-20 minutes.
