I love Sundays!
I am able to worship at a church Sunday mornings followed by an anointed sermon. Next, comes a yummy meal thrown in the crock-pot and a quick side dish (usually salad). Afterwards, I usually do laundry, DIY project, reading, or taking a nap. ZZZZzzzzz.....
Anyhow, I wanted to share with you something quick, simple, and Paleo friendly for your dinner meals! Seriously, takes minutes to prep, cook, and did I mention PALEO! Score!
"Paleo Zucchini & Squash"
Ingredients:
3 zucchinis-washed, peeled, and diced
3 yellow squash-washed,peeled, and diced
1 yellow onion
coconut oil
sea salt/pepper
Directions:
First wash all your vegetables completely followed by peeling the skin with a potato peeler.
Cut your zucchini and yellow squash into medium size pieces, place to the side.
Dice your onion.
Next, I used my wok pot. I just find the wok pot easier to stir and coat vegetables in. :)
Pour about 2 TBSP. of coconut oil in the pot. Heat the oil for about 1 minutes before adding your diced onion.
Once you added your onions, have it cook for about three minutes.
Now add your yellow squash and zucchini.
Make sure you fold in your vegetables to "coat" it with the oil.
Season with sea salt and pepper.
Occasionally stir your mixture.
Cook until slightly brown and soft.

Worthy is the Lamb!
As I
woke up this morning, I was pondering on all of things to do on my
"To-Do-List", and wanted to start my day off by not becoming
overwhelmed. So, I sang praises to The Lord and it just brought a sense
of joy over me!
While working outside in the Texas heat and the sun become unbearable at one point. As soon as I started thinking, "How am I supposed to get anything done outside with this heat? I have so much to do!" I was reminded by a quite and calming voice inside, "Remembered how you praised me this morning?" Quickly I started singing praises again and soon found myself not thinking about the list or the heat. At that moment a huge cloud came in front of the sun blocking the rays and providing amazing shade for me! It stayed completely the whole time while I was outside! I couldn't resist but to smile and thanking Jesus for some relief in a time of need.
The Lord responded, "See, I take care of you even among the heat of the sun." I was also reminded of a scripture verse, Psalms 121:5-6. "The Lord watches over you, the Lord is your shade at your right hand; the sun will not harm you by day, nor the moon by night."
Oh how great is our God! Worthy is the Lamb! Remember my friend, that The Lord will always take care of you even amongst the smallest things because He loves you. :)
One way I keep organize is by using DIY home sweet home free printable sheets. You can find her here DIY Home Sweet Home with more printable(s)! I love it! At times, I have to keep a complete task on what to do daily. From babysitting, helping my mom with physical therapy, my grandma's doctor's appointments, and applying to teaching positions....I can forget about small chores that need done. Example: Changing a light-bulb. I never remembered till late at night. Ha!

I absolutely love this song! When I wake up in the morning to start my daily routine, Ialways most of the time, start with this on heart. It just speaks to me in the deepest way. Plus, making the bed takes less time I feel while singing this song. When speaking to my Father first thing in the morning, it always starts my day off right.

Today was all about blowing out twenty-six candles, making homemadeMEGA pizza rolls, and having a cupcake! This weekend was definitely my 'cheat day' (or two). Sshhh! Just don't share that information with my CrossFit friends. Ha-ha!
About a year ago I happened to find a pin on Pinterest describing on how to make your own pizza rolls. For me, it was more like MEGA ROLLS! Seriously! It's incredible. Your children will cheer you for making a homemade pizza night-in! Your hubby/boyfriend will fall in love with you all over again due to the fact that there is leftovers! And you, my dear, will be hitting the mall looking for those perfect running shoes with the extra cash you will be saving!
Ingredients:
1 package of Hormel pizza pepperoni
1 package of mozzarella shredded cheese (4cups)
1 can of organic marinara sauce
Italian seasoning
slice veggies of your choice ( I cut up: mushrooms, jalapenos, onions, and green peppers)
olive oil
Any frozen bread dough you want. (Comes 3 loafs in a pack) You can find this in the freezer isle.
Directions:
Preheat oven to 375
Follow the directions on how to defrost the dough.
I put mine on a plate, covered, and put in over night in the fridge.
Roll your dough out with a little bit of flour on the roller pin.
Drizzle with olive oil, Italian seasoning, cheese, pepperoni.
Then, start rolling!
Follow the steps again and again until all dough is gone.
Once your pizza rolls are done, place on a cooking sheet. Drizzle with melted butter, I use 2 TBSP. of melted butter.
Jonathan and my dad wanted a jalapeno version.
I did the same steps, but added sliced jalapeno peppers.
On top on the roll I added cheese and peppers.
Looks like a stuffed burrito for Chipotle! Yum, Chipotle!
Bake for 20-30 minutes or until golden brown.
Serving:
To serve the pizza rolls, simply cut in 1 inch sections. Serve with a side of marinara sauce!

Grandma's 'Cheesy Scalloped Carrots'
My Friday night consisted of my fiance, Jonathan coming over for a date night-in! I love that we can be content by staying inside watching a movie and popping fresh buttery popcorn! There is something about having a bucket of popcorn while waiting for the action scenes to come alive. Or for me, finding that true love was always right beside you. Sigh. Love stories.
Tonight's healthy meal consisted of baked tilapia fish, easy Paleo sauteed 'Zucchini & Yellow Squash' (recipe coming soon), and my grandma's good ol' 'Cheesy Scalloped Carrots'. Ah! If you could smell the house around dinner time you would've most certainly stayed.
Ingredients:
4 cups of organic baby carrots (2 lb. bag)
1 stalk of celery (diced)
1 sweet yellow onion (diced)
1 can of cream of celery soup (I always get the "less sodium")
2 cups of croutons (any kind will do)
2 cups of Low-fat shredded cheddar cheese
Directions:
In a medium size pot, boil water.
Preheat oven to 350.
Once water is boiling, add your carrots, celery, and onions to the water. Cook until carrots are soft (about 15 minutes).
In a large mixing bowl, mix celery soup, croutons, and cheese together. Mix well. :)
Once veggies are cooked, drain immediately.
Next, add your cooked veggies into your soup mixture. Mix well.
Once mixed, place in sprayed casserole dish and place in oven uncovered for 30 minutes.
Although this may not be a Paleo dish I would usually make, I did go with organic vegetables, low-fat cheese, and less sodium soup. One moderate serving was my fill. Enjoy!
